Instructions

- Repeat these stretch-and-folds every 30 minutes for 2 hours (4 sets total). The dough will transform from shaggy to smooth.
- Shape into a tight ball, place on parchment paper, and let proof for 45 minutes while preheating your oven with a heavy tray or Dutch oven inside.
- Score the top with a sharp knife and bake for 30–35 minutes until the internal temperature hits 200°F (93°C).
Chef's Note
The 70% hydration level is high enough for good crumb but low enough to handle easily by hand. If the dough feels too sticky during the first fold, wet your hands with cold water to prevent sticking rather than adding extra flour.
